NO store bought batter needed!
This is one of my top go-to recipes to make for breakfast – during the week and on the weekends it is the easiest, most satisfying way to start your day!
When I cook, I basically just eye ball the ratios- so depending on how many people are eating, you can adjust the ratios to your choosing- just make sure the batter isn’t too runny 😉 Also, you can put all the ingredients in the blender if you prefer to have the pancakes smoother. I prefer to mash everything with a fork to enjoy it chunky!
Ingredients
3 extremely ripe bananas
1 cup of oats
1 organic free range egg (for all you vegans, this recipe works without the egg too!)
2 tbsp chia seeds
1 tbsp cinnamon
¼ cup dried coconut
1 cup chopped fruits or your choosing (optional)
Peanut butter topping (optional)
Honey/Agave/Molasses topping (optional)
Coconut Oil/Ghee (purified butter) for cooking
Directions: Mix all of the ingredients together. Heat up a sauce pan with 1 tsp of ghee/coconut oil on medium heat. Place dollups of the pancake mixture on the sauce pan until golden brown and cooked all the way through. Serve with toppings of your choosing: my favorites are chopped fruits, honey and dried coconut.
