Having the TIME to cook and experiment with different ingredients is such a privilege!!! I’m trying to take full advantage of it because when I’m back in the States my life won’t be so “de boa” anymore. So, I’ve been getting super creative lately and having a lot of fun with it!

Brazilian Cheese Bread- VEGAN style! Naturally gluten-free and I’m telling you…for someone who loves the original version, this is just as good if not BETTER. It makes for the perfect afternoon snack or appetizer at a dinner party.

Ingredients:

2 cups or 300 grams (cooked) sweet potato/manioc root puree

2 cups cassava Flour/ manioc root flower

¼ cup water

5 tbsp. ghee/coconut oil

1 tbsp. salt (optional)

Oregano flakes

2 tbsp. chia seeds

2 tbsp. flax seeds

Directions:

Cook the sweet potato (or manioc root) first, then smash or blend until it becomes a puree. Pre-heat the oven to about 300 degrees F. Combine all of the ingredients, mix with your hands until all chunks disappear. Make small balls, then place onto a baking sheet. Bake for 30-40 minutes (depends on the size, keep an eye on it so they don’t burn!)

These disappear quick so don’t be afraid to double the recipe!
